You may think why it is called chicken marsala, and not chicken masala. The shortest answer is that this one is an Italian preparation. This special and delicious preparation derives its name from the delicate sauce the main ingredient of which is a special wine “Marsala” from the Marsala region of Italay.
Ingredients for chicken
Chicken breasts 500 gram
Chilli powder 1/2 teaspoon
Salt 1/2 teaspoon
All purpose flour 3 tablespoons
Olive oil 3 tablespoons
Ingredients for the Marsala sauce
Mushrooms – 500 grams
Butter 2 tablespoon
Garlic sliced 1 teaspoon
Chicken stock 1 cup
Heavy cream 200 ml.
Marsala wine 200 ml.
Parsley chopped 1 small bunch
All purpose flour 1-2 teaspoon
Italien seasoning
Salt to taste
Preparation of chicken
Slice the chicken breast into evenly sized pieces and then roll it to 1-1 1/2 cm. thickness using a rolling pin. You may place the chicken pieces between two pieces of plastic pieces while rolling them thin.
Now sprinkle the flattened chicken pieces with salt and chilli powder on both sides and smear it on to the chicken pieces.
Spread the all purpose flour on a flat plate and place each of the chicken pieces in the plate and coat them thinly with the flour.
Heat 2 tablespoons of olive oil i a thick bottomed skillet and cook the chicken pieces on both sides till they become golden brown and fully cooked. Cooking (shallow frying) them 5 minutes on each side may be enough.
When cooked remove them from the skillet and keep aside.
Preparation of the Marsala Sauce.
Now add the butter to the same skillet.
Add the sliced mushrooms and garlic to the skillet and saute till they are cooked and change colour.
Now add the Italian seasoning and mix well.
Add the chicken stock, marsala wine and Cream and mix together.
If the sauce is not of the desired consistency you can add all purpose flour also.
Allow to simmer for a few minutes till the desired consistency is achieved.
Add the chicken pieces to the sauce and allow to simmer for 2-5 minutes.
Garnish with chopped parsley.
Serve along with rice, pasta, bread, boiled potatoes and the like.
