It’s very easy to make sweet spongy cupcakes with a minimum effort and ingredients within an hour. What you need is ingredients like butter, sugar, all purpose flour, baking powder and of course the delicious vanilla essence. Sorry, I prefer the pulp of vanilla beans or self made vanilla sugar.
Butter at room temperature 200 grams
Sugar (preferably brown coloured) 200 grams
Vanilla sugar (Vanilla essence) 1 teaspoon
Eggs 3 nos (at room temperature)
Baking powder 1 teaspoon
Salt a pinch
Mix the butter and sugar in a bowl and beat it fluffy using an electric hand mixer or a wooden spoon.
Now add the vanilla essence or vanilla sugar and mix well.
Add the eggs one after another to the mixture and beat together till foamy.
Add the all purpose flour, salt and baking powder and mix together.
Now add the flour mix in portions to the butter egg mix and join all together using a spatula or wooden spoon.
Prepare a baking tray with the cups for cupcakes and pour each a spoonful of the prepared cake mixture.
Preheat the oven at 180°c and bake the cakes for 20-25 minutes.
You can check whether the cake is cooked by inserting a skew or fork into the middle of the cake. If the skew comes out clean the cake is cooked.
When done remove from the oven and allow to cool.
