Dill Potato Wedges from the Oven

This is one of my favourite recipes. It uses fresh potatoes, and while it being prepared in the oven we use the minimum of oil for the preparation.


Potatoes 3/4 kilo

Dill chopped 2 tablespoons

Salt to taste

Pepper powder as per taste

Olive oil 2 teaspoons

Parmesan cheese (grated) 2 tablespoons.


Wash, clean, dry and cut the potatoes into wedges.

Add the potatoes to a bowl, add the oil, pepper and salt and mix together.

Spread an oven tray with parchment paper and spread the potato wedges evenly.

Preheat the oven to 200°c and bake the potato wedges for about 40 minutes.

Remove from the oven and sprinkle with chopped dill and grated parmesan cheese.
