Ingredients
All purpose flour 1 cup
Carrot grated 200 gram
Butter 1/2 cup
Sugar 3/4 cup
Eggs 1 nos
Baking powder 1 teaspoon
Cashew nuts broken 2 tablespoon
Raisins 2 tablespoon
Vanilla essence 1/2 teaspoon
Preparation
Mix the all purpose flour and the baking powder together. This can be done in a better and efficient way by mixing both together and then sieving them together through a sieve.
Blend the carrots, sugar and the egg in a blender or mixer grinder.
Transfer the blended mixture to a bowl and add the melted butter and all purpose flour and mix together.
Add the cashew nuts, raisins and vanilla essence and mix together.
Now grease a cake form with butter and fill the cake mix to the cace form.
Heat oven to 180°c and bake for 30-45 minutes.
Test whether the cake is cooked properly by inserting a fork or a skew or the handle of a spoon into the cake. If the inserted spoon or fork comes our clean you can be sure that the cake is cooked.
Remove from the oven and allow to cool or a rack.
Serve this healthy snack along with coffee, tea and the like.
