
Ingredients
New potatoes of even size 750 grams
Onions chopped 1 nos
Sweet chilli powder 1/4 teaspoon
Vegetable stock powder 1/2 teaspoon
Salt to taste
Vegetable oil 2 tablespoons
Parsley chopped 1 tablespoons (dried parsley leaves 1 teaspoon)
Preparation
Wash and boil the potatoes in a deep pan till cooked. Please check whether the potatoes are properly cooked by inserting the tip of a fork or any other sharp tipped instrument. If the fork easily goes inside the potato you can be sure that it is cooked properly.
Drain the water from the potatoes and allow to cool adding cold water. When cooled remove the skin from the potatoes and keep aside.
Take the chilli powder, salt and the vegetable stock powder in a small bowl and mix together to a paste adding 1-2 tablespoon water.
Heat oil in a pan and add the finely chopped onion and saute on medium heat till the onions become translucent in colour.
Now add the chilli – vegetable stock paste to the sauted onions and mix well and saute till the water is evaporated.
Now add the peeled potatoes to the pan and mix with the spiced oil.
Add the parsley and mix together. Allow it to cook for a few minutes on low flame.
Remove from heat and serve.
