Banana Crumble cake


For the filling.

Ripe bananas 2 nos

Lemon juice 1/2 teaspoon.

Butter 1 tablespoon

Sugar 1 Tablespoon

For the dough

All purpose flour 180 gram

Egg 1 nos

Sugar 3 tablespoon

Vanilla sugar 1 teaspoon

Vegetable oil 6 Tablespoon

Baking powder 1 teaspoon

Salt a pinch

Powder sugar if you like it

Preparation of the filling

Peel and slice the bananas and keep aside.

Heat butter in a pan,  add 1 tablespoon sugar and allow to melt stirring well.

Now add the sliced bananas and mix well and allow to cook for 2-3 minutes stirring well.

Remove from heat and keep aside.

Preparation of the dough

Break the egg and pour the ingredients to a bowl.

Add 3 tablespoon sugar and mix well using a whip.

Add 1 teaspoon vanilla sugar and mix well.

Add in 6 teaspoons of olive oil and mix well.

Mix 180 gram all purpose flour with 1 teaspoon baking powder and a pinch of salt to the bowl and mix well.

Knead to a fine dough using both your hands.

Separate 1/3 of the dough, make a ball of it, cover it with a plastic foil and keep in the deep freezer for half an hour.

Now grease a 22 cm dia baking tray and spread the 2/3 dough evenly.

Make some holes on it using a fork.

Now pour the banana filling and spread the 1/3 dough from the deep freezer in crumbles using a scrapper.

Preheat oven to 180°c and bake the cake for 25-30 minutes.

Take off from the oven and allow to cool.

Sprinkle some powdered sugar over the cake according to your liking.
