Bitter-gourds 500 grams
Onion finely chopped 2 nos
Ginger chopped 1 tablespoons
Green chillies chopped 4 nos
Salt to taste
Butter or vegetable oil 2 tablespoons
Grated coconut 2 tablespoons (Desicated coconut can also be used)
Wash and dry the bitter-gourds. Split them lengthwise into two and remove the seeds and soft tissues from the inside of the bitter-gourds. Using a small spoon you can easily remove the seeds.
Now slice the bitter-gourds into thin pieces. You can see how thinly they are sliced from the pictures below.
Peel the onions and chop them finely.
Remove the skin from the ginger pieces and chop them finely.
Chop the green chillies also.
Now heat oil/butter in a pan and add the lentils, allow it to fry till it till it reaches a golden brown colour.
Add the chopped ginger, chillies and onions and saute till the onions become translucent.
Add the salt and mix together.
Add the chopped bitter-gourd pieces and 2 tablespoons of water, mix together and cook on medium flame for 5 minutes with closed lids.
After 5 minutes remove the lids, add the grated coconut, mix together and cook for a few minutes more stirring well till the excess water is evaporated and the bitter-gourd stir-fry becomes dry.
remove from heat and enjoy.
