Zucchini Eggs Stir-fried

Ingredients

Zucchini eggs stir-fried

Zucchini 500 grams

Onions finely chopped 2 nos

Eggs 4 nos

Green chillies finely chopped 4 nos

Ginger finely chopped 1 teaspoon

Coriander leaves chopped 1 tablespoon

Olive oil 2 tablespoons

Salt to taste

Preparation

Clean, peel and cut the zucchinis into small dices.

Peel the onions and chop them finely.

Chop the ginger and green chillies finely.

Heat oil in a pan and add the chopped onions, chillies and ginger and saute well for 5 minutes.

When the onion pieces are cooked and turn translucent add the chopped zucchinis and salt and mix well and cook on medium flame for 5 more minutes or till zucchinis are cooked.

When the zucchinis are cooked add the eggs one after another stirring well.

Cook for another five minutes stirring well till the water is evaporated or absorbed.

Serve along with boiled rice or you can make a sandwich if you have bread at hand.
