Malai Pudding

Malai Pudding

Producing malai is a complicated and time consuming process.  Here in this recipe we are trying to achieve the consistency of malai by adding milk powder to the milk.  So it is an imitation of the true malai pudding. Try it and enjoy it.

Milk 2 cup

Milk powder 3 Tablespoon

Sugar 3 Tablespoon

Cardamom powder a pinch

Gelatine 1 tablespoon

Almond flakes for decoration.

For caramelising

Sugar 3 tablespoon

Water 2 tablespoon

Heat milk in a pan, add the cardamom powder, 3 tablespoon sugar and milk powder and allow to boil.

Once boiled remove from heat and keep aside.

In a thick bottomed pan caramelise 3 tablespoon sugar adding 2 tablespoon water.

Once the sugar is caramelised pour the milk mix into the pan, add the gelatine, mix well and cook till the gelatine is dissolved.

Remove from heat and fill in a suitable mould to set.

Garnish with fried almond flakes.

Once it reaches room temperature place it in a fridge for an hour or two.

Take out from the fridge and cut into pieces of suitable size and serve.
